Chickpea & Cauliflower Flatbread with Avocado

Avocado-toast is all the rage right now. It is such a healthy option that makes for a very quick and delicious treat. Its super trendy to have a creamy avocado toast for breakfast, lunch, dinner or a late night snack. Avocado toast is so simple because it is, after all, a piece of toast with slices of avocado or a mash on top, but if you haven’t tried it yet then you can’t say anything. After that initial bite, you’ll quickly want more because it is very rich. I have tried the traditional avocado toast, but I decided to get creative with my toast and take it to the next level.
12 oz. small cauliflower florets
1 tbsp. of extra-virgin olive oil
2 tbsp. of lemon juice
4 flatbreads toasted
1 can of chickpeas
2 ripe avocados
1/4 tsp. of pepper
1/4 tsp. of salt
- On a large baking sheet, coat the cauliflower florets with olive oil, a 1/4 teaspoon of salt, and a 1/4 teaspoon of pepper. You’ll want to roast them in 425 degrees fahrenheit for twenty to twenty-five minutes.
- The open can of chickpeas should be rinsed, drained, and patted dry with paper towels before placing them on a baking sheet with olive oil, salt, and pepper. They’ll roast at 425 fahrenheit for thirty minutes until crisp.
- The flatbread slices will toast for ten minutes in the oven and should be left to cool for a couple seconds before spreading the avocado mash on top.
- Add some lemon juice, a pinch of salt and pepper to each flatbread and then top with roasted cauliflower and chickpeas.
